Raw - Not cooked at all; thoroughly red/bloody inside 46°c
Very rare/ Blue - Very red and cold ("blue rare") 46–52°C
Rare - A cool red center; pink otherwise 52–55°C
Medium rare - A warm red center, otherwise pink 55–60°C
Medium warm - Pink center, otherwise brown 60–65°C
Medium well - Mostly brown with a gray center, very little if any pink 65–71°C
Well done - Brown throughout with no sign of pink >71°C
**In Taiwan, a number system from "0" to "10" is commonly used to specify steak doneness, with 0 as raw and 10 as "well done."
