my 2nd attempt at baking bread!

i’ll tell you at this end of this post whether i’ve succeeded this time.

:P

firstly, the dough, i had to use my electric whisk to knead this giant dough for super long and i can feel my electric whisk going to cannot tahan anymore.

after kneading, its time to let it “rest” and “grow”.

wrap it with a cling wrap.

roll them into dough of 50-60g each and they just cant stop growing!

it was supposed to be quite rounded and they became out of shape after awhile.

knead them somemore and shape them into different shapes and “insert” in my hotdogs, ham, tuna and shredded cheddar cheese and sesame seeds for garnishing!

sesame seed = spicy tuna flavour!

and the taste was nice nice nice!!

much much nicer than the 1st time i tried baking bread.

this time round i let my dough rest enough and expand enough through the help of Mr. Yeast and also kneading it well with the electric whisk.

But the bread could be fluffier.

The initial “expanding” time could be shorten, cause towards the end, when i put all the ingredients on the dough already, i have to let it expand for another 50mins.

But somehow i think the “power” of Mr. Yeast is finishing already, therefore the bread didn’t expand as much.

I guess if i knead the dough more and i let it expand more for the later stage, it will taste even fluffier!


Now for the recipe!

Ingredients
(A)
480 gm bread flour
120 gm plain flour
110 gm castor sugar
20 gm milk powder
4 tsp instant yeast

(B)
1 egg
300 ml cold water(substitute with milk if don’t have milk powder)

(C)
60 gm unsalted butter
10 gm salt

Method
1. Mix (A) till well blended. Add (B) to form a dough. Add in (C) and knead until dough is elastic and smooth.
2. Gather dough to form a ball and cover dough with cling wrap and let it rest for abt 50-60 mins or double in size.
3. Divide dough into portions of 60 gm each. Shape into balls and leave it to rest for abt 10 mins. Roll out dough and wrap with desired fillings. Shape as required and let it proof on lined or greased baking tray for another 50-60 mins or until dough is double in size.
4. Apply egg wash (1 beaten egg) on dough and sprinkle some shredded cheese on it. Bake dough at 180-190ºC for abt 12 mins.
