Salted Egg Yolk Cookies

The super melt-in-your-mouth and fragrant salted egg yolk cookies!

3x of the recipe below yield me about 2 medium size red CNY bottles.

Remember to cook the salted egg yolk(try not to microwave)

Ciao!

Here's the recipe that is mostly adapted from Frozen Wings

Makes about 60 very small one-mouthful size cookies
85g unsalted butter, softened at room temperature
40g caster sugar

1/8 tsp salt
2 cooked salted egg yolks, mashed (one of mine is double yolks but they are very small :p)
125g all purpose flour
10g corn flour
1/8 tsp baking powder
1 egg yolk, lightly beaten to glaze
black sesame seeds to sprinkle

Using a wooden spoon or an electric mixer, beat butter, sugar and salt until light and fluffy. Sift flour, corn flour, baking powder into the butter mixture and use a spatula to mix until the flour mixture is totally absorbed into the butter mixture. Then stir in the mashed salted egg yolks and gather the crumbs to form a soft pliable dough. Wrap dough in cling film and allow it to rest in the fridge for at least 30 mins.

Line baking trays with baking paper and preheat oven to 170°C

Place dough on a lightly floured surface to roll into 3 mm thickness and cut them into shapes using your desired cookie cutter. Brush the cookies with egg yolk and sprinkle sesame seeds on them and bake for 15 mins or until golden brown. Allow the cookies to cool slightly on the baking trays for 10-15 mins. Transfer them onto a wire rack and allow them to cool completely.

Tried this Banana Cake spongy-type recipe and like it alot alot!

First time successful with a sponge cake :D

Gonna record the recipe here.

Ingredients:
2.5-3 Eggs (Room temp - Approx 150g)
130g Sugar (Reduced, original-150g)
200g Banana (Ripe & cut into small pcs)
150g Top Flour (or plain flour/superlite flour/cake flour)
1/2 tsp Baking powder
1/4 tsp Baking soda
100g Corn oil (or any vegetable oil except olive oil, if prefer richer flavour replace with melted butter but it may cover the banana fragrant)
1/8 tsp Banana essense (optional)
Method:Preheat oven to 160 degree C.
Grease & line a 8" round tin with paper.
1. Sieve flour, baking powder & soda together. Sieve twice & set aside.
2. Whisk eggs, sugar & banana at max. speed till stiff/ribbon stage. (For Kenwood Chef - approx 10-13mins)
3. Fold in flour & mix well. (Can use spatular or hand to mix)
4. Add in oil & mix well till batter is shiny & flowing.
5. Bake for 40 - 45mins.

Been a long long long time since I last blogged.

Was searching for some crabbing spot and I chanced upon my old blog post.

Feeling so nostalgic after reading my old post all the way from the JC days till now.

Its so worth it, the time spent on blogging these years.

ALRIGHT.

Back to the main topic of this post.

It's the time of the year againnn.

NOV/DEC BABIES.

Went all the way to Tamp One to celebrate with the two girls. (the two girls who I spent my grad trip with at Korea and Taiwan for a total of 26days!)

Tried baking Red Velvet cup cakes which turned out to be really red. A little too red actually.

It supposed to be some classy kind of dark red, not cherry red!

Then the Taiwan Clique.

Had dinner at Mad About Garlic. The price of the food there is really expensive. But I feel that the Garlic Snow Cheese(with prawns) something pizza is really superbly nice.

Other than that the stuffs are soso.

As requested by the BFF.

Banana Cake! (with the very pretty icing, but unfortunately part of it melted when we unveiled the cake)
